Pink Bourbon is one of coffee's most coveted varieties, a rare Red and Yellow Bourbon hybrid that thrives above 5,900 feet at Finca Los Cedros. Given its own dedicated field and harvested entirely by hand, only the ripest pink cherries make the cut. A meticulous 72-hour fermentation process involving 48 hours in oxidation, followed by 24 hours in mucilage (also know as "Honey") draws out the silky body and vibrant complexity that make this coffee truly exceptional.
