On the Farm's steep hillsides, workers hand-select only the ripest cherries, using a funnel-style collection system that keeps the harvest moving efficiently from slope to processing.
Their Yellow Honey stands out for both its process and its flavor. Using an eco-conscious honey method, a carefully measured layer of mucilage is left on the bean, enhancing natural sweetness while significantly reducing water use. The coffee then undergoes a long, controlled fermentation totaling 168 hours, beginning with 96 hours as whole cherries before transitioning to 72 hours with mucilage. This extended process, combined with the farm's varying elevations and microclimates, builds a cup with depth and complexity that is hard to replicate.
